Coming out of the Cellar Party

Many among you know us as the FatCat Vintners, but we’re recently come out of the cellar revamped as the Wreckless Blenders, bonded and ready to unleash upon the world our 100 cases of delicious, hand-crafted red wines!

Lots of you have helped over the years, by scraping bottles, bottling finished wines, tasting and commenting, and by helping us polish off 20 years worth of homemade wine. You have been a big part of this operation…now it’s time to taste our new wines, sample the delicious snacks from Ambrosia Café, and hang out with a very special crowd.

An RSVP is not absolutely necessary, but it would give us an idea of how many bottles to bring…

Wreckless Wines will be available to purchase that evening, with arrangements to pick them up at the winery in Carmichael.

The Wreckless Blenders, Don Koehler, John Trioano, Dave Ashukian, Johnny Rocket Nichols, and Jim Brown are proud to include you as friends…so please join us for our Coming Out of the Cellar Party!

15 Feb 09 – Tasting Day in Loomis

Notes for the Day

Seeking more input on the wines, both 07 and 08.  Acid added to some of  the 07s and it is settling down now, and seems to increase the tannins more than the acid tartness.

The 08 Syrah tastes good, but the pH is still high.

The 07 Petite came in at 56 ppm free SO2. That seems adequate to high, until you see the pH is 3.7or 3.8, which means that is equivalent to 28 ppm in terms of SO2 activity at pH 3.4 or 3.5.

Adding a few chips in a couple of wines that have not been chipped yet, probably the Malbec and Zin, for some vanilla to add to the nutty flavor from the shaved barrels.  (We should think about that at Carmichael, too, for a couple of things).

Discussions of the Day

Bottle type picked. Nice looking, good heft, tapered, and antique green coloring.

Corks selected – natural cork with Wreckless Blenders and the website.

Capsule type selected. Rich maroon color. We discussed having the logo or other decoration, but the cost is pretty high for setup, so we decided to wait.

Tasted 2007 wines, most are very good. Some need chips. We decided to rack the wines out of the shaved barrels in the next few weeks.

Action Items

Rack the wine out of the shaved barrels.

Add acid to a handful of wines to adjust pH.
